Apple French Toast Pudding

  • 1/2 cup Orange Juice
  • 1 Apple, sliced
  • 3 eggs
  • 1 tsp cinnamon
  • 1 tbsp flour
  • 1/4 cup milk
  • 4 slices bread

Blend juice and apple into a smoothie. I use a hand blender, and a 2 cup measuring cup. Add the rest of the ingredients. Cover the bottom of a plate with the mixture. Set 2 slices of bread on the plate. Cover the top of the bread with the mixture. Let bread soak for 10-15 minutes. Use a meat cleaver* or spatula to transfer bread to frying pan. Cook slowly. Makes 4 slices.

When I met my wife Mona in college, our first date was a bike-ride across town. Of course, the peddle broke on my bike just as we reached the far side of town. But that turned out just fine. We got to walk our bikes back several miles across town. The slow pace left us plenty of time to talk and get to know each other.

On the walk back, we noticed a cheapy infomercial meat cleaver along the side of the bike trail. Being a thrifty college student, I considered it good fortune and carried it home with me. We still have it some 20 years later, and I still smile every time I get to use our first-date meat cleaver.
