Asian Salad

Asian Salad is a common recipe that combines coleslaw and ramen noodles. This is our simplified version. We almost always dish up baked beans on our plate first, and then put the Asian Salad over the top of the beans. The two flavors work well together.

  • 1/2 16 oz packaged Precut Coleslaw
  • 1/2 5 oz packaged Fresh Spinach
  • 1 oz package Ramen Noodles
  • 1/2 cup Vegetable Oil
  • 3 tbsp Vinegar
  • 1/4 tsp Salt
  • 1/4 tsp Pepper

Place the Coleslaw in a bowl.

Chop the Fresh Spinach and place it in the bowl with the Coleslaw.

Crush the Ramen Noodles inside the package. I usually pound it with my fist to start and then pinch the smaller chunks between my fingers. If I try to break up the smaller chunks with my fist, I end up popping the bag and making a mess.

In a separate bowl mix the Vegetable Oil, Vinegar, Salt, Pepper, and the contents of the seasoning packet from the Ramen Noodles.

Just before serving pour the oil mixture over the Spinach and Coleslaw. Toss slightly and then add the raw crushed ramen noodles. Toss thoroughly.
