Spinach Bean Dip

This is a simple recipe that Iíve grown fond of. I actually eat this for a meal and find itís tempting because I can make several meals worth in about 10 minutes. Fat free beans and generous portions of veggies make me feel reasonably healthy about eating it.

  • 1 - 16oz can Taco Bell Fat Free Refried Beans
  • 1/4 cup diced onion
  • 1 cup diced tomatoes
  • 1 cup or more diced baby spinach
    or 1/2 cup iceberg lettuce
  • 3/4 tsp. cayenne red pepper
    many people will prefer less red pepper
  • 1/4 tsp. sage
  • 1/4 tsp. coriander
  • 1/4 tsp. cilantro

Just throw everything into a bowl an mix it up. Eat with your favorite tortilla chip.

If you want the veggies to stay pretty, mix the seasonings into the refried beans first, then mix in the veggies. If you don't stir it too much, the vegetables will stay nice and bright instead of getting covered with bean paste.

It's easy to over-do the onion and have it end up over-powering everything else, so be a little conservative with it.

Iceberg lettuce works in a pinch, but is bland and watery. If you use lettuce instead of spinach, use about 1/2 cup.

There is a big difference in flavor between different brands of refried beans. Be sure to try Taco Bell or La Preferida brands first.

Amounts for spices are approximate, I usually just throw some in without measuring it. WARNING: Your tastes may dictate significantly less red pepper.

I divide this up into 3 or 4 containers and save the rest for later meals.
