This Panasonic bread maker is great for making bread in Large, XL, or Medium and from light to dark loaves. The only problem I have is with the recipes. How does a person measure every thing in 7/16 or 3/ 16 ounces. Using the cup and spoon that is with the bread maker is not always helpful in measuring. Learn how to do the 16th and your loaves will be delicious. I hate doing math when cooking!!( I would rather have the Cups and TBS or Tsp measurement.

My first machine didn't work properly. I called Panasonic for help but they are worthless. I only made two loaves of bread before it malfunctioned and they wanted me to drive 125 miles one way to have a service center look at it (or ship at my expense).....after only two loaves! Panasonic has the worse customer service I have ever seen in my 47 years. They just don't care. Amazon on the other hand, was great. Long story short.....I exchange my machine for a new one (same model) and it was on my doorstep in two days. The exchange process was quick and easy. The new machine has made about ten loaves so far and works great. Great job Amazon!

Purchased this breadmaker about a month ago, made some bread (about 4 loaves) and pizza dough. The machine worked as advertised, i.e. it made bread and dough. Some vibration present during kneading, but that is expected, I like the fact that the pan is locked at the bottom and not by two flimsy tabs on the sides as some other machines are, less things to break later. The first loaf of bread fell but the subsequent loaves came out looking great, the trick here is to use bread flour instead of plain white, I think. The pizza dough came out really good. I would recomend this machine to people who don't do fancy breadmaking but make about 1 or 2 loaves a week. It is 1/4 of the price of the fancier machines and does the job that it is made to do.
Gave it 4 stars because I only had it for short period of time. Don't know how well it will work after a year yet.

Although it comes with an excellent booklet, giving all types of tips to ensure a good loaf...and step by step instructions, the machine is a "toy." It vibrates during the kneading cycle, causing the unit to shake visibly. None of the loaves of French bread have come out properly. On the "light" color, the bread is not done, and the top is not fully cooked. I kept it because I threw away the box, and will still use it for white bread and dough cycle.

The first couple of times we tried this machine, the loaves came out super dense. Our previous machine was a West Bend which was great. Then, when that broke down we bought a single paddle Oster- bad idea.

So we splurged and bought the Zojirushi and it worked great but the loaves all came out like bricks- waaay too dense. Finally we went back to the recipes from our old West Bend- success! The loaves are light and large and a real pleasure to eat. The big trick? Use one less cup of flour!

This is my first bread machine. I need to make a lot of bread because I must eat gluten free. I am very pleased with this machine. It is easy to use for simple bread, but also has all the settings making it easy to bake gluten free bread.

I use this constantly as I am always making sour-dough rolls (must feed starter every two weeks) and my neighbors and church like the various breads I make. I do have to be sure and correctly indicate whether I want to make bread or just dough (for rolls) and sometimes it is very hard to read the yellow so I keep my book handy to refer to it for the various selections (crust, weight, process, etc.) All in all though for the price it is very satisfactory (I have gone through four bread machines so far and will find out how long this one will last)

I'm surprised that no one has raised the issue of Teflon in these products. DuPont maker of Teflon had to deal with huge lawsuit related to it, and eventually agreed to pay the penalty. Search the google, it's easy to find. You'll find info like this for example:

The coating on non-stick pans used in millions of kitchens throughout the world has been linked to birth defects in humans. Chemical firms face claims that perfluorinated organic chemicals such as perfluorooctanoic acid (PFOA) are a health threat. PFOA was first used in 1945 and is in Teflon and oil and water-resistant coatings.

DuPont, which makes Teflon, has to answer accusations in the United States that it had evidence about dangers posed by PFOA but deliberately and illegally kept it secret. The US Environmental Protection Agency says that DuPont concealed its own 1981 research showing that its pregnant workers were passing the chemical to their unborn children. In addition, in 1991, it failed to report evidence that the chemical had contaminated the water supply to 12,000 people.

Teflon (a brand name of Dupont) is a polytetrafluoroethylene (PTFE) that is supposed to be safe, but when heated to high temperatures are known to give off toxic gasses. One of these toxic gasses is perfluorooctanoic acid (PFOA or C8) and is thought to be a likely carcinogen (causes cancer). Other gases given off allegedly will kill small birds and cause polymer fume fever in people (flu like symptoms). The temperature for these gasses to be emitted was reportedly very high and Teflon (PTFE) was deemed safe for cooking.
However, the safe temperature may not be that high. There is a lot of research in the works to measure just how low the temperature has to be for Teflon to start giving off toxic gasses at an unsafe level.

I don't consider any of these bread machines safe until they phase out Teflon. There are actually very viable alternatives. But I talked to Zojirushi representative and they are not even willing to consider alternatives.

Now, anyone reading this has background in manufacturing? :)

I have a great idea for much better bread machine. And it's not that difficult to make.

This machine kicks out a great whole wheat gluten bread. However it smells like skunk! I noticed this when I got it out of the box in December, but thought it was oils that needed to burn off. Five months later it is still stinks up the corner of the kitchen where it is stored. The bread tastes fine, but it has me wondering if it could be unhealthy if it smells that bad.

Esta máquina es lo máximo; yo no le tenía mucha fé, pero por curiosidad mas que nada, la pedí como regalo del día de las madres; y cuál sería mi sorpresa que desde el primer pan que preparé, me salió perfecto,delicioso, y prepararlo es demasiado simple; lo único que yo les pediría, es que el instructivo también estuviera escrito en español, ya que yo tengo que estar traducieno las recetas, y éso se me hace algo complicado... por lo demás, ésta máquina es tan buena, que parece increíble.

The recipe booklet contains a country french loaf, it is spectacular! Try it before store you try bought bread machine baking products!

I don't like the shape of the loaves it produces - compared to a standard bread loaf, the loaf is a little too tall in height and a little too short in length. Maybe this happens with all bread makers, I don't know because this is my first one, but I was surprised to discover I need to dig the blade out of each loaf. Removing the pan from the machine when baking is done is tricky. After a few loaves came out with patches of 'pastry dough like stuff' sticking to one side or another of the loaf, I learned that it is helpful to coat the interior with a cooking spray. We've made whole wheat, sourdough and challah - all have tasted good - certainly better than store-bought packaged bread - but honestly, not quite the same quality as when I've made these breads using conventional methods (and yes, that's taking into account the changes one makes to a recipe when one is cooking with a bread maker). This bread maker does save time in preparation, kneading and cleaning. I would recommend this bread maker to someone who prefers home made bread but has limited time for baking and cleaning up.

My little machine arrived this past Friday @ 2:00 p.m. By 2:10 p.m. my lst. loaf was baking away, and several hours later, voila!..a great little loaf, perfect size for a small family, perfect everything.
I have two of the large Zo's so I have been using ABM's for about 10 years. These are great, but they bake a big loaf with a lot of waste of ingreds./bread for my family, which is smaller now.

Re. difficulty in removing the paddle after the loaf has been removed...in my big Zo's I gently take the dough out, remove the paddles which are not kneaded (sorry) once the bread has finished rising, and I place the dough back into the pan for the final process of baking.
I have not tried this with the Little Zo, but I probably will, although the one (big Zo's have two paddles) little paddle only leaves a small indentation.
Note: if you try this, be very gentle with the dough. Open the cover,lift the dough up gently from the bottom using both hands, remove the little paddle, and keep the dough out of the pan for the shortest time possible. It should take you less than a minute to complete. Also, keep drafts away from the dough during the process.
This can only be done after the last rise, just as the machine screen indicates that it is shifting to baking.

I have a lot of two pound recipes I have come up with over the years for my big Zo's which I will be adapting for the little Zo (no, you can't simply half them). I have found a web site that claims it has a conversion table for this.

One more thing, it can make a difference in how the final product comes out, in where you place the machine when it is in use. My lst. loaf was in the kitchen where one of the central air vents was in the vicinity and cooling away. The size of the finished product was good, but I knew it should have been better.
For the next loaf I simply moved the machine to a galley off the kitchen where there is no vent. The 2nd. loaf was perfect with great rise.

I also love that the little Zo has a handle and is very easy to move & store. The big Zo's weigh 20 pounds and can't be easily moved.

This fun, top quality, worth ever dollar, little Zo gets a huge thumbs up from this ABM baker.

I mostly use my bread machine to prepare dough because it kneads the dough thoroughly and keeps it the right temperature for rising. The recipes that came with machine are usable with some tweaking. The French bread recipe that came with the machine and cycle 3 (up to the third rise) is good for pizzas and baguettes. My family has really liked the results. The bread is soft inside with a nice crispy crust, before the machine my crusts were always too hard inside and out. I have been using the machine almost every week for the past six months without any problems. Soaking it right after I take out the bread usually gets rid of any crust stuck in the blades. I have baked cherry/raisin bread and sandwich bread in the machine with pretty good results, but the crust is a little overdone at the bottom and a little tough to cut.

For starters this machine worked well, for the price.
Downsides;
1. It does not have adjustable rise time, would be handy for high altitude baking. Not a big issue though.
2. After 6 months of making one to two loaves per week, and the occasional jelly/jam (awsome setting by the way). the loaf pan began to leak through the bottom, and machine started making more noise. Continued use found greasey slime on bread dough. After inspecting pan I discovered the rivets that hold the beater frame to pan were loose and allowing liquids to leak! Also the beater shaft started getting loose and liquids would grind in it until a gray slime would emerge on bread.
3. Damage control. customer service was very helpful, asked me to mail in bread pan, no problem they would replace or fix as soon as possible. Well over a month later, I called hadn't recieved any news. They said pan is back ordered, no idea when a new one would be available. Interesting how they are not out of stock on Amazon or other internet suppliers.....
