Banana Corn Bread

This is a standard northern corn bread recipe with a few extras to make it moist. Northern corn bread leans to the sweet tastes, while southern corn bread leans towards a salty fried bread.

  • 1 Mashed Banana
  • 1.5 cup Cornmeal
  • 0.5 cup Flour
  • 2 tbsp Soy Flour
  • 1 tsp Sugar
  • 3 tsp Baking Powder
  • 1.5 cup Milk
  • 1/4 cup Vegetable Oil
  • 2 Eggs

I really like the moistness added by the banana and soy flour.

Mix the dry ingredients. Add the banana and wet ingredients. Pour in a greased baking pan. Cook at 450 ° for about 30 minutes, or until a knife comes out clean.

I tend to mash the banana in the mixing bowl and add the dry ingredients on top of it to avoid dirtying another dish.
