Whole Wheat Corn Bread

I like to make corn bread during the winter so I can run the oven to warm up the kitchen. This whole wheat version is moist and light with a bit more nutty taste.

  • 2 Mashed Bananas
  • 1 cup Cornmeal
  • 1 cup Whole Wheat Flour
  • 4 tsp Baking Powder
  • 1.5 cup Milk
  • 1/4 cup Vegetable Oil
  • 2 Eggs

You can get by with 1 banana if you use white flour, but the whole wheat flour requires 2 bananas. I've also increased the baking powder from 3 teaspoons to 4 teaspoons.

Mix the dry ingredients. Add the banana and wet ingredients. Pour in a greased baking pan. Cook at 450 ° for about 30 minutes, or until a knife comes out clean.
